Diabetes-Friendly Dishes to Try in the New Year

Chef Steve walks viewers through the step-by-step preparation of his grilled seafood and quinoa salad with mango and avocado.
To prepare this delicious dish, use a grill pan on your stove to grill shrimp and scallops. Cook quinoa just as you would prepare rice. Combine the quinoa with some black beans, peppers, fresh tomatoes, scallions, avocado, mango, and a citrus dressing. You can even add some minced jalapenos if you enjoy spicy foods. Toss all of these ingredients together with your grilled seafood for a light dinner.
